Spicy Beef with Vegetables and Green Tea

Ingredients
1 lb beef, cut into strips
1 tbsp dried, organic edible green tea leaves
2 tbsp chilli garlic oil
½ cup ginger and garlic sauce
6 dried red chillies
2 small leeks cut into strips
2 small fresh green chillies, thinly sliced
1 large carrot cut into strips
Salt and pepper to taste
For the marinade:
1 tbsp soy sauce
1 tbsp minced garlic
1 tbsp minced ginger
2 tsp rice wine
1 tsp cornstarch
Method
To make the marinade, simply mix all of the ingredients in a bowl. Add the strips of beef to marinate, then cover and refrigerate for at least 30 minutes but ideally overnight.
Heat the chilli garlic oil in a wok or frying pan on a medium-high heat.
Add the green tea leaves and dried chilli and stir fry for approximately 30 seconds, or until fragrant.
Add the beef and any left-over marinade and stir fry for 2 minutes until brown.
Add the leek, carrot and fresh chilli and stir fry for 2 minutes. Stir in the ginger and garlic sauce, reduce the heat slightly and cook for a further 2 minutes.
Season to taste and serve immediately with rice or noodles (serves 4).
