Ginger and Green Tea Bread

Ingredients

4 eggs

2 cups flour (all-purpose)

1 cup sugar

¾ cup olive or canola oil

¼ cup loose, edible and organic green tea leaves, ground

¼ cup chopped candied ginger

2 tbsp fresh lemon juice

2 tsp ground ginger

2 tsp vanilla extract

1 tsp baking powder

1 tsp salt

¼ tsp baking soda

Rind of 1 lemon, grated

Method

Preheat the oven to 350 degrees, then oil a 9×5 inch baking pan and line with parchment/baking paper.

In a large bowl sift the flour, ground ginger, salt, baking powder and baking soda, then add the green tea, lemon zest and candied ginger. Stir the ingredients and set to one side.

For this part, you’ll need a food processor. Break the eggs into the machine and beat until frothy. Slowly add the sugar in three stages, leaving about 30 seconds between each, before combining the oil, vanilla and lemon juice and drizzling over the mixture while the motor is still running.

Add the pre-mixed dry ingredients to the food processor and pulse until everything is fully blended.

Pour the mixture into the baking pan and cook for 50 to 55 minutes, or until a knife comes out clean. Let the bread cool and serve.

Note – the bread should have a slightly green hue, and to store wrap it tightly in plastic film once cool.
