Yield: 6 servings
1 ½ lbs skinless, boneless chicken breast (cut into 1 inch strips)
1 cups chicken broth (low fat/low sodium)
2 can (14oz) coconut milk
1 1/2 Tbsp. Edible Organic Green Tea Leaves (ground)
1 ½ Tbsp Curry Powder
1 Tbsp ginger (grated)
1 small can peas & carrots
4 sprigs green onions (sliced)
Pepper to taste
Salt to taste
1 clove garlic (minced)
2 Tbsp Olive Oil
½ tsp basil
½ tsp ground cumin

Season chicken strips with salt, pepper, basil, ground cumin.
In saucepan add Olive oil heat well over medium heat and add the chicken strips, garlic, onions to sauté and cook for about 15 minutes. Slightly heat chicken broth in microwave about 1 minute and whisk in edible organic green tea, curry powder, ginger and add to chicken. Add coconut milk and stir continue to cook for about another 10 minutes then add peas & carrots, cook another 5 to 10 minutes or until chicken is done.
Enjoy Served over brown rice with coleslaw.
