Yield: 1 cup
1 ½ cup white wine
1 Tbsp. Edible Organic Green Tea Leaves (finely chopped)
2 Tbsp vinegar
2 small shallots (diced)
2 Tbsp Butter

Place wine, vinegar, shallots, edible organic green tea leaves in sauce pan, reduce mixture then add butter a bit at a time by whisking away from heat.
Keep warm for service. Maybe served with any fish, especially salmon and whitting.
