1 Chicken breast (boneless & butterflied)
¼ cup coarse bread crumbs for stuffing
1 tsp. mustard
1 tsp. butter
1 Tbsp diced purple onion
1 Tbsp diced bellpepper
1/2 Tbsp ground edible organic green tea leaves
1 tablespoons extra virgin olive oil
1 clove garlic (finely chopped)
2 Tbsp dried cranberry
2 Tbsp Green Pea/Carrots (can)
Salt to taste
½ cu brown rice
½ cup water
½ cup chicken broth
Preheat oven to 350 degrees F.
In a bowl combine bread crumbs, onion, bellpepper, edible organic tea leaves, garlic, cranberries, peas and carrots, butter, mustard, salt and pepper to taste. (ground edible organic green tea leaves using a coffee grinder)
Cut a slit in chicken breast (butterfly the chicken) and rub outside of chicken with olive oil and sprinkle with desired seasoning (pinch of salt and pepper, cumin powder, season salt) stuff with bread crumb mixture.
Combine brown rice with water and broth in a glass baking dish.
Place the stuffed chicken breast on top. Bake until the chicken is cooked (about 45 minutes).
If you are conscious about the bread crumbs and desire a healthier dish then replace the bread crumbs with ¼ cup ricotta cheese and remove the mustard and butter.
