English Muffin with edible organic green tea leaves eggs

Preparation Time: 15 minutes
Cook Time: 30 minutes each
Yield: 2 servings

Ingredients:

2 Whole wheat English Muffins
2 eggs
2 egg whites
1 tsp edible organic green tea leaves (finely chopped)
2 ½ -inch round slices Canadian bacon
2 large ½-inch thick slices beefsteak tomato
Nonstick cooking spray

Options- top with swiss or yellow American cheese

Directions:

Whisk together egg and egg whites in a bowl, add edible organic green tea leaves and stir.

Spray nonstick skillet with cooking spray.
Ladle ½ egg mixture into skillet and cook, folding like an omelet until eggs are cooked through.
Turn out onto plate and keep warm (cover with foil paper or place in microwave with door closed). Repeat with second half of egg mixture.  In same skillet heat Canadian bacon 2 minutes on each side.
Toast English muffins, place egg and fold to fit muffin, then place bacon slice and tomato on top, then top with other end of muffin half.
