Crispy Chicken with Edible Organic Green Tea Fruit Salsa

Ingredients for edible organic green tea fruit salsa:
1- 1/3 cup fresh fruit (chopped) mangoes, kiwis, grapes, strawberries and pineapple
¼ cup green onion (chopped)
¼ cup red bell pepper (chopped)
3 Tbsp. edible organic green tea leaves (finely chopped)
½ tsp. honey
Salt to taste
Pepper to taste

Crispy Chicken Ingredients:
4 large chicken breasts
1/3 cup whole wheat flour
1 egg (beaten)
1 cup panko breadcrumbs (Japanese breadcrumbs)
Salt to taste
Ground Black Pepper to taste
Olive Oil for Frying

Directions
Preheat oven to 375 degrees F.

Prepare salsa first by mixing together all salsa ingredients. Refrigerate until ready to serve over crispy chicken.

Heat olive oil over a medium high heat.
In a deep dish place wheat flour, in a second dish place the beaten egg and in a third dish place panko bread crumbs. Butterfly all 4 chicken breast, dip first into wheat flour – shake off excess- then dip into egg and final step dip into breadcrumbs. Repeat for all remaining chicken breast. Place breaded chicken breast in heated pan and brown on all sides remove and continue cooking in the oven for 10 to 15 minutes or until internal temperature reads 165 degrees F when a cooking thermometer is inserted through the thickest part of the chicken; sprinkle with a dash of salt & pepper immediately upon removing from oven.
Heat salsa for 1 minute in a microwave safe dish, serve over crispy chicken.

Enjoy alone or with grilled asparagus tossed in olive oil sprinkled with sea salt and a sprinkle of lemon juice.
