Broiled Talapia

Yield: 2 serving


2 (6-oz) talapia
½ cup chopped tomato
1 clove garlic (minced)
1 shallot (sliced thinly)
1 Tbsp fresh parsley (chopped)
1 1/2 Tbsp Olive Oil
1 Tbsp edible organic green tea leaves (chopped)
1 tsp lemon juice
2 Tbsp White Wine
Salt to taste
Fresh ground pepper to taste

Preheat Boiler.
In a medium bowl combine tomato, parsley, white wine, shallots, garlic and edible organic green tea leaves, stir in 1 Tbsp olive oil, salt and pepper and lemon juice.
Brush fish with remaining olive oil, sprinkle with salt and pepper.  Arrange fish in a single layer on jelly-roll pan that has been sprayed with cooking spray.
Bake 5 minutes (until fish flakes).
Remove and serve with salsa.
