Edible Organic Green Tea Ceviche

Yield: 8 servings

1 lb shrimp ( peeled and choppd)
½ cup fresh lime juice
3 tsp. Edible Organic Green Tea Leaves (finely chopped)
1 large tomato (half ripened, diced)
1 small red onion (minced)
¼ bunch fresh cilantro
Salt to taste
Black pepper to taste
½ can sliced nacho jalapenos
¼  juice from jalapeno peppers

In a small bowl toss shrimp in lime juice, cover and refrigerate for about 1 hour until shrimp is white (like when boiled).  Drain then add edible organic green tea leaves, tomato, onion, cilantro, salt, pepper, jalapenos, jalapeno juice and 2 Tablespoons fresh lime juice, toss well to incorporate.

Serve right away or keep chill for service.
