Olive Chicken

Olive Chicken with Edible, Organic Green Tea Leaves

2 skinless, boneless chicken breasts
salt to taste
1 1/2 tspns of vegetable oil
1 clove garlic, crushed
1/4 bay leaf
1/8 tspn thyme
1/8 tspn ground black pepper
1/8 tspn ground edible, organic green tea leaves
1 tomato, peeled and quartered
5 stuffed green olives, 5 black olives
1/4 cup white wine
1/4 cup chicken broth
1 cup basmati or jasmine scented rice

After washing chicken breasts, season with salt, pepper, thyme, edible organic green tea leaves and crushed garlic. Massage this herbal mixture into each chicken breast and leave to stand in fridge overnight.

Heat oil in large skillet over medium heat. Brown chicken in oil, about 5m on each side. Add olives, white wine, chicken broth and tomatoes.

Reduce heat to low and simmer for about 45m, or until chicken is cooked and juices run clear.

While chicken is cooking, put 1 cup of rice for 1 cup of water in rice cooker and cook.

Serve with the rice, garnish with a bay leaf.
