Sautéed Chicken Breast

Yield: 1 serving

1 Chicken breast
1 Medium tomato (blanch & shock)
1 clove garlic (finely chopped)
1 shallot (sliced thinly)
½ onion (sliced thinly)
2 Tbsp Mushroom (Optional)
1 Tbsp Olive Oil
1 Tbsp edible organic green tea leaves (chopped)
1 Tbsp butter
White Wine
Salt & pepper to taste

Place approximately 1 Tbsp Olive Oil to coat sauce pan bottom and heat.  Sauté chicken breast by browning on both sides (cook to 165 degrees F).
In a small pot place 1 cup water bring to boil and drop in tomato remove within two to three minutes (or when skin starts to loosen around tomato) remove tomato and immediately place in a ice water bath (ice cubes and water).
In separate sauce pan place 1 Tbsp Olive Oil heat add shallots, garlic, onion, edible organic green tea leaves then white wine and diced tomato and chicken, salt & pepper, pour onto plate.  Add butter and a bit more white wine to deglaze pan and pour over chicken and vegetable in plate.
