3-3 1/4 lbs green bell peppers
1 1/4 lbs fresh tomatoes
1 1/2 cups onion
6 tbs olive oil
1 oz edible, organic green tea leaves
1 tsp paprika powder
Cut green peppers into slices lengthwise. Poach tomatoes for a few minutes in boiling water, peel and cut into quarters. Cut onion into rings then cut the rings into halves.
Using a large saucepan, add onion rings to boiling oil and brown lightly. Quickly add the paprika powder, stir in the green peppers, tomatoes and salt. Cook over high heat, then when the water has mostly evaporated cook over medium heat until tender, but keep covered. Add the edible, organic green tea leaves and simmer for a further 20m.
Serve with fresh warm bread.
